Experience the long tradition of Japan’s artisan knife craftsmanship with the MIYABI KOYA 8-inch Gyutoh from the 4000FC series. Handcrafted in Seki, Japan, this knife fascinates with its beauty and scalpel-like sharpness.

The blade is fabricated from revolutionary FC61 fine carbide stainless steel, achieving a 61 Rockwell hardness. It undergoes twofold ice-hardening (FRIODURx2), offering exceptional durability, cutting edge retention, and superior corrosion resistance. The blade is meticulously hand-honed using the three-step Honbazuke process, boasting an authentic, thin Japanese profile (9.5-12 degree edge angle) and a sandblasted Katana-edge cut, reminiscent of Japanese swords.

 

Design & Ergonomics
The aesthetic elegance continues to the handle. The octagonal-shaped beige Pakkawood handle and bolster ensure the knife is a safe and comfortable instrument, nesting perfectly in the hand. A stylish mosaic pin and rounded spine/heel contribute to both the stylish appearance and tireless cutting comfort. ZWILLING manufactures all MIYABI knives at its own production site in Seki, where German engineering meets East Asian craftsmanship.
